Known as Carya illinoinensis in the ancient language of nature, the tree that gives these treasures can grow majestic in size and age, requiring vast spaces to dance with the wind without cluttering plants or walls.

Pecans, jewels of the earth, are the precious fruit of the Carya illonoinensis, a species that originated in the central and southern lands of the United States of America and now spread to every corner of the world.

In the realm of botany, the majesty of pecans is manifested in their imposing appearance: the bark, wrapped in grayish-brown hues, caresses the reddish-brown wood. The roots anchor strongly, while the long, sinuous leaves reveal their beauty between May and November.

The fruit, keeper of secrets, rests in a green shell and reveals itself in all its glory in late autumn, opening into four parts. Gathered in close-knit groups, the nuts reveal sizes from 2 to 5 cm in length and 2 cm in diameter. Their liquid core turns into solid sweetness, while the shell becomes sturdy and the percentage of water dissolves from 75% to 30%. The inner fat is enriched sevenfold, guarding the nourishing essence of this gift of nature.

To collect these treasures, people wait for the shells to hatch and dance to the ground, where farmers carefully gather them. The magic of harvesting is revealed amid mechanical shakers and tarpaulins that respectfully welcome the nuts. After harvesting, the nuts are cleaned, graded, dried and masterfully graded, ready to reveal their goodness to the world.

Pecans, which originated in overseas lands, are now revealed in lands as far away as Israel, Brazil, Australia and even in parts of beautiful southern Italy.
